 The financier is a small rectangular cake made with almond flour, browned butter, sugar, flour, and egg whites. Its origins date back to the 17th century, when it was known as “visitandine,” named after the nuns of the Visitation order who baked it. However, the modern version is attributed to a Parisian pastry chef, Lasne, in the 19th century. Located near the stock exchange, he revamped the recipe into a practical, hand-held cake, shaping it like a gold bar to appeal to the financiers in the area.
